Reporting to the Executive Chef, the Sous Chef plays a key role in the daily management of culinary operations. He assists the chef in the planning, organization, and supervision of production, while ensuring the maintenance of quality and performance standards in the kitchen.
The incumbent actively contributes to creating a distinctive gastronomic experience, ensuring the consistency, quality, and presentation of the dishes. Main responsibilities
- Assist the Chef in the daily management of the kitchen and production planning
- Supervise, guide and motivate the kitchen team
- Participate in the training and integration of new employees
- To guarantee the quality, consistency and presentation of dishes according to established standards
- Ensure compliance with recipes, costs and portion standards
- Collaborating on menu development and process optimization
- Participate in inventory management and loss control
- Ensure strict adherence to hygiene, sanitation and food safety standards
- Maintaining a healthy, structured and professional work environment
- To actively contribute to a positive and collaborative work environment
- Proven experience in professional kitchens (minimum 3 years)
- Experience in supervision or team management (a significant asset)
- Inspiring leadership and excellent team spirit
- Rigour, organizational skills and the ability to work under pressure
- Passion for gastronomy and quality service
- Good knowledge of MAPAQ standards and hygiene standards
- Pastry skills (an asset)
